Tasty Tuesday Bacon-Roasted Chicken with Potatoes!

Looks like Donna has sent us another winner! Can't wait to try this one!
BACON-ROASTED CHICKEN WITH POTATOES

INGREDIENTS:
12 chicken drumsticks
12 slices center-cut bacon
salt and pepper to taste
1 onion, coarsely chopped
1 1/2 pounds of Dutch yellow potatoes or any small yellow potatoes

Seasoning mix:
2T dried chives
2T dried basil
1 T garlic powder
1 T adobo seasoning
1 T ground pepper

DIRECTIONS:
1. Preheat oven to 400 degrees.
2. Wrap each chicken piece in a slice of bacon, trying to cover the whole piece. Place the wrapped chicken pieces in 9 x 13 baking dish, season with salt and pepper, and sprinkle the onion over the chicken. Push potatoes down into the spaces between the chicken pieces and around the edge of the dish.
3. Combine the Seasoning Mix in small bowl, sprinkle the seasoning mix to taste over the chicken and potatoes.
4. Bake in the preheated oven for 1 hour, until the bacon is crisp and brown and the potatoes are tender.
Serve hot with a nice salad or fresh green vegetables.

    The recipe sounds delicious, too---what's not to love about meat and potatoes seasoned with BACON?? Unfortunately, I'm trying to lose a pants size or three, and have decided to forgo bacon for a while---sigh. Reading the recipe was tasty, though! Thanks, DDonna!!

  4. It's a tasty recipe. I cheated. And wrapped half the pieces in the bacon only. Because I two have cut way back. You get the flavor but not the extra calories on the 6 other legs. It worked out. I also substituted paprika for Adobo. I couldn't find dry Adobo seasoning here. The chicken is seasoned and the potatoes. It's quite TASTY. I can't take credit for Mr. do with me what you want. He's TASTY and glorious all on his own.

  20. This recipe sounds delicious, but I have a few questions. Did you use Goya Adobo Seasoning and if so, which variety? If it is unavailable in my area, is the paprika mentioned by DDonna a good substitute?

    The adobo seasoning I've found is primarily a mixture of salt, pepper, garlic powder, and oregano. I mix my own and leave out the MSG that most brands include.

    As to the identity of today's hunk, I have no clue. Wish I did...

    Adobo is Spanish for sauce or seasoning or marinade used in Latin American- and Southwest U.S.-style cooking.
    Like Cheryl said it's a combination of salts, and peppers, oregano and many OTHER Latin Seasonings. I'm unable to get Adobo in my stores. So I go with Smoked Paprika. I like the Spanish Smoked Pepper Taste without the heat. ENJOY!!!!
