Tasty Tuesday Adobo Chicken Legs!

Let's see now, what fabulous recipe has Donna sent me this week? Or should I post one of my own? Actually, I made some chicken last night that was darn good. The guys liked it, anyway, and it was pretty easy. Maybe I should write it up.
Okay, here goes nothing! Just keep in mind that I didn't actually measure anything when I made this.

Adobo Chicken Legs

Chicken legs (I had seven of them)
Adobo seasoning
Lemon pepper seasoning
1 medium onion chopped
3 sweet banana peppers seeded and chopped
2 cloves of garlic, minced
1/2 cup water (or chicken broth)
1 tbsp olive oil

Coat the skillet (I use an iron skillet) with olive oil and put in the chicken legs and throw in the other ingredients, sprinkling it liberally with the Adobo and lemon pepper seasoning. If you don't have Adobo, just use salt, pepper, garlic powder, and oregano. Same thing. Then put a lid on it and cook over medium heat for two hours, turning the chicken once in a while. You can add more water while it's cooking if needed. Mix 1 tsp of cornstarch with 1 tbsp water and add this at the end to thicken the sauce. Serve with mashed potatoes and enjoy!

    Great recipe, too---sounds like the sort of thing I cook! I never measure anything, either, but if you keep tasting while you cook, it comes out tasting just the way you like it in the end...Tonight I made a 'stew' with ground bison meat, quinoa, onion & celery, and various frozen vegies, and it was really tasty. My son & his fiance and I ate it up while we watched many episodes of the 2nd season of TRUE BLOOD, the HBO vampire series---it's really a great show, and incredibly funny!

    I've never used quinoa in anything, Suzy. Must be a regional thing we don't get around here, but bison meat sounds interesting. Never tried that either.

    Glad you're feeling special, Ana. I feel pretty special, myself. I've already written 2300 words on CSC8! Only 88,000 more to go!

  7. @Diva Donna...You are a dog in the night. We might have to toss you in the shower with the wet hunk!

    Maybe Daniel has a brother and this is he? Are tattoos relatively easy to remove? The bone structure is so similar. Doesn't really matter...he's nice to look at and I do wish he'd lose the towel. All we can do for the moment is look at his nose and speculate;)

    Cheryl...The recipe sounds really good and easy and one I could easily eat it for several days running. Do you know if it freezes well? I'm going to talk about mashed potatoes when I come back but for now I have to run and get ready for a follow-up doctor appointment...PITA (pain in the ass).

  11. @Donna...It was a six week follow-up visit. I had surgery called a MOHS procedure on the side of my nose on June 1. Bottom line it was basal cell carcinoma that never healed from the first time it was removed several years ago in the dermatologist office. It was more involved than I anticipated...like removing a piece of cartilage from my ear to put in my nose. Aggh!

    In case you're interested, the MOHS procedure is a slice and look-see under the microscope while you wait until there are clear margins at the site of the cancer.

    The doc is pleased with the way it's healed but there is a divet that will need to be fixed in a couple of months...more time is needed for the wound to finish filling-in as much as it's going to. At least I can stop the vinegar and vaseline routine. Who knew (maybe Cheryl)...vinegar is an anti-septic.

    Now for a completely new subject:) Mashed potatoes. The real cooks of the group will probably be horrified but I discovered "real potatoes" in a package for about two bucks (available in 5 flavors) that makes four 1/2 cup servings. Empty package in a microwave bowl with two cups of water, stir and microwave for 3-4 minutes; stir and serve. They are DELICIOUS and I bet anybody who LOVES mashed potatoes as a guilty pleasure will agree. There are probably other brands on the market but I can swear to "IDAHOAN." So far I've found them in Safeway and WalMart and I keep them stocked:D

    I'm glad the procedure went so well. A gal at Curves had a similiar procedure. She came to Curves looking like a Raccoon. Black and Blue and bandages on her face.
    The potatoes sound quick and a easy meal for one. That's a good brand.
    I'm not the only one keeping the secret. It's Ana, She hasn't told you gals about a special surprise she had this week. Come on Ana Share it.

  14. @Nancy--I LOVE those potatoes, and even though I'll use fresh potatoes mostly everywhere else, I gladly reach for those packages whenever I'm strapped for time!

    @Cheryl--Bison meat has almost NO fat in it, and tastes better than ground beef. I can often find it fresh, at Von's, but I freeze it in 1# increments, 'cause it's easy. Quinoa is just another grain--they say it's healthy, but it doesn't taste much different than brown basmati rice. I like it because it cooks quickly.
