Tasty Tuesday Mushroom Quesadillas!

This has got to be the easiest, tastiest thing I've made in a very long time. The real beauty, however, is the fact that you don't have to make enough to feed an army. This recipe made two quesadillas, but you could easily multiply the amounts or cut them in half.

Mushroom Quesadillas

Ingredients
1 cup sliced mushrooms
2 tbsp Butter
Salt
Chili powder
Quesadilla cheese, sliced
2 Flour tortillas

Directions
Saute mushrooms in butter until cooked through. Sprinkle with salt and chili powder and saute a few seconds more. Place tortillas on a greased baking sheet. Put half of the mushrooms on one half of each tortilla, top with enough cheese to cover the mushrooms, and fold the tortilla over the filling. Bake at 350 about 5-7 minutes until the cheese melts. Serve with sour cream and salsa if you like, but they're darn good just as they are.

Tasty Tuesday Mexican Torte!

A taste of Mexican Flavor!! 

Mexican Torte

Ingredients (serves 4)

  • 1 pound chorizo sausage, casings removed and crumbled
  • 1 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 1 (4 ounce) can chopped green chile peppers, drained
  • 8 (10 inch) flour tortillas
  • 2 cups shredded Pepper Jack cheese, divided
  • 1 (16 ounce) can refried beans, divided
  • 1 (7 ounce) jar roasted red peppers, drained

Directions

  1. In a large skillet or frying pan, cook chorizo, onion and garlic over medium heat. Cook, stirring occasionally, until sausage is done. Drain off grease, stir in chilies and set aside.
  2. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 10 inch pie plate.
  3. Place 2 tortillas in pie plate. Spread half of the sausage mixture over tortillas. Sprinkle with half of the cheese. Place 2 tortillas on top of cheese. Spread with beans. Place 2 tortillas on beans and place peppers on tortillas. Place 2 tortillas on top of peppers. Spread with remaining sausage mixture. Sprinkle with remaining cheese.
  4. Cover and bake in preheated oven for 40 minutes. Uncover and bake 15 minutes more, or until cheese is melted and center is hot. Cool 10 minutes before cutting.

Tasty Tuesday Cube Steak Parmigiana!

To get your Tuesday off to a good start, here's another great recipe from our own Diva Donna!

Cube steak Parmigiana

Ingredients(Serves 4)

  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs
  • 2 tablespoons water
  • 1/3 cup crushed saltine crackers
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon dried basil
  • 3 tablespoons vegetable oil
  • 4 (4 ounce) beef cube steaks
  • 1 1/4 cups canned tomato sauce
  • 2 1/4 teaspoons white sugar
  • 1/2 teaspoon dried oregano, divided
  • 1/4 teaspoon garlic powder
  • 4 slices mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
  2. Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish. 
  3. Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.  Serve over Pasta. And add a nice wine.  Garlic bread and Salad.

Tasty Tuesday Baked Potato Pizza!

BAKED POTATO PIZZA (I'm thinking football  or hockey parties)

Ingredients

  • 1 (6.5 ounce) package pizza crust mix
  • 3 medium unpeeled potatoes, baked and cooled
  • 1 tablespoon butter or margarine, melted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried Italian seasoning
  • 1 cup sour cream
  • 6 bacon strips, cooked and crumbled
  • 3 green onions, chopped
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Cheddar cheese

Directions

  1. Prepare crust according to package directions. Press dough into a lightly greased 14-in. pizza pan; build up edges slightly. Bake at 400 degrees F for 5-6 minutes or until crust is firm and begins to brown.
  2. Cut potatoes into 1/2-in. cubes. In a bowl, combine butter, garlic powder and Italian seasoning. Add potatoes and toss. Spread sour cream over crust; top with potato mixture, bacon, onions and cheeses. Bake at 400 degrees F for 15-20 minutes or until cheese is lightly browned. Let stand for 5 minutes before cutting.
