Tasty Tuesday

Here's another great recipe from Donna. You can tell how much fun she had making these cookies, can't you?
Choco-Coco Pecan Crisps







1 cup packed brown sugar
1 stick of butter
1 egg
1 tsp. vanilla
1 1/2 cup flour
1 cup chopped pecans
1/3 cup cocoa powder
1/2 tsp. baking soda
1 cup coconut
Beat brown sugar and butter until light and fluffy. Beat in eggs and vanilla. Combine flour, baking soda, cocoa,pecans. Stir into butter mixture to form stiff dough. Sprinkle coconut on hard working surface. Divide dough in 4 parts. Shape each into a log about 1 1/2 inches thick and about 5 to 7 inches long. Roll in coconut and Wrap in plastic wrap. Refrigerate until firm, about 1 hour or up to 2 days. Preheat oven to 350 degrees.







Cut rolls into 1/8 inch slices; place ungreased cookie sheets. Bake for 10 to 13 minutes (Mine our done at 10). remove to wire racks to cool.







Enjoy!!! Makes about 5- 6 dozen small cookies.

    They're such fun cookies to make. Forming that Log is so much fun. It's a real hands on experience. And the end result. Yummydoodles!!!

    You could leave out the nuts and roll them in powdered sugar, Kendra. I bet they'd taste just as good!

    Sorry I'm so late getting to the blog this morning. I had to take Peaches to the vet. She's feeling very poorly today.

  5. Cheryl's right. You could forget the nuts, Roll in Powdered sugar. That would work perfectly.
    What's wrong with Peaches. Did she eat your Christmas Lights? Poor Doggie. I hope she'll be ok?

  6. The vet said it was something intestinal. She was sick around Thanksgiving, too, and he said she might not have gotten over that completely. She hasn't been eating well and had some blood in her stools. Right now she's penned up in the hallway by the side door and just lays there and looks at me. She's not supposed to have anything to eat or drink for 24hrs, so that was the only place I could think of to put her unless I lock her in the tack room up at the barn.

    Nut and coconut allergy Oo Kendra that’s bad. I bet you have to be extra careful when you buy any desserts.

    Sorry to hear about Peaches Cheryl it’s really difficult when they get sick because they can’t really tell you where it hurts. Pepper was hospitalized for about 4 days a couple of weeks ago with something similar. He got so dehydrated that they ended up keeping him. I hope Peaches gets better soon.

  8. Morning! Now that I have my new range installed I am looking forward to trying out all these fun recipes that have come across your blog. This weekend, I'm hoping to bake to my heart's content!

    Cheryl, I'm sad for Peaches! Poor baby, I hope she feels better really soon. Too bad ginger ale and crackers won't work...my kids live on that when they don't feel good. Keep us posted on how she's doing!

    Another day of chauffering the parents around today...they leave tomorrow; today is the last day to shop for them!

  10. Poor Peaches.
    My Grandson Doggie Clutch has been to the vet many times with intestinal things. His stomach has been flushed a few times. Because they don't know they can't eat everything in site. That dog ate Everything. He ate Shannon's favorite Bikini's. Chewed up every chew toy and then swallowed them.
    You name it. He ate it. He's older now. And is better.
    I hope Peaches gets better quick.

  12. She isn't one for chewing up everything, which is what you'd think for a puppy her age. However, she seems to be feeling better this afternoon. Hopefully the new medicine will do the trick!
