Tasty Tuesday Beer Butt Chicken!

BEER BUTT Rosemary CHICKEN

Ingredients

1 (12 fluid ounce) can beer
  • 1 orange
  • 1 (3 pound) whole chicken
  • 1 large sweet onion, sliced
  • 4 sprigs fresh rosemary
  • seasoned salt, to taste
  • 1 (14.5 ounce) can low-sodium chicken broth
  • 4 red potatoes, sliced

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish. DRINK half the beer from the can, spray the can with cooking spray, and set it upright in the center of the baking sheet.
  2. Cut 2 thin slices from the orange, and set aside. Cut the rest of the orange into large chunks. Loosen the skin over the breast of the chicken, and insert an orange slice, an onion slice, and 1 rosemary sprig under the skin of each side of the breast. Place the orange chunks and 2 sprigs of rosemary into the cavity of the chicken.
  3. Spray the outside of the chicken with cooking oil spray, and sprinkle with seasoned salt to taste. Place the chicken onto the beer can in an upright position, with the can inserted into the cavity of the chicken. Pour the chicken broth into the baking dish, and place the rest of the sliced onion and the potatoes into the broth.
  4. Roast in the preheated oven until the skin is crisp, the meat is no longer pink at the bone, and the juices run clear, about 1 1/2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Let the chicken rest for 10 minutes before slicing.

    OK Donna, fess up, where do the pictures of "canned" chickens come from, bare butt beer drinkers, and anything ya wanna fess up to?!?!?!

  2. I don't know if I'm a big fan of beer but with chicken? That does sound pretty good :D.

    And the bare butts. I like one nice butt. And now we get to see like 5? I really, really can't complain :D

  3. To set the record straight. It's Matthew MacConaughy's fault. Years ago. He was talking about making Beer Butt Chicken on Oprah. And half the fun was listening to him give the directions. So I had to go try it. And we have made it since. I even have a recipe book called: A Man a Can and a plan.
    And the picture, I stole out of my son's Colorado College Days photo album.
    Looks like quite a fun party. Lots of Bare Butts. I changed alot of diapers on one of them. It is a yummy recipe too.shake LOL!!!

  4. The young guys next door have some pretty great pool parties. LOL!!!
    The recipe idea came from Matthew Mcconaughey on a talk show years ago. He did his on a grill.
    Mostly I love the name of it. It's actually very tasty. Really!!!

  8. oops!!! Something very strange is going on here today. When I came on today. No comments at all. So I commented. It didn't show up. I went back and made a briefer comment and that showed up and I still was the only one. But now both comments are there. And my son is going to kill me if he ever finds out I posted that Naked Beer Drinking photo. I see Cheryl you're having trouble too. LOL!!!

  10. I've never done this in an oven but I've done it on a grill and it's pretty good.
    Just as good is a can of Coke Cola- sounds gross but it's very good and no the chicken doesn't taste like soda pop.

    And he sure does keep himself in pretty Yummy shape. I've seen those pictures of him too. LOL!!!

  14. Hey ladies-we love beer butt chicken! My husband makes it on the grill. We even found this metal thingy that goes up the chicken and holds the can of been in place. Yummy!

    Donna, you're so funny sneaking photos from your sons college days. I wish I had gone to college if the parties ended up with naked boys drinking beer. I missed so much!

    My week is all thrown off with Monday being the holiday observed...boy-I gotta get myself together here!

    You've made the Beer Butt Chicken.
    It's tasty isn't it? And I found out the fact Matthew was on Rosie O'Donnell Show when I first saw him talking about his Texas Beer Butt Chicken. So we've been making it along time. BUTT, I started making it in the oven only a few years ago. I wanted it in the winter. And Lisa, The girls watching this Bare Butt Beer Game were having alot of fun.
