Tasty Tuesday Slow Cooker Island Beef!

Diva Donna writes....

This is a very Tasty dish. Add some fresh flowers to the table, some candles, some soft Island music and add a few glasses of Sangria, add some Tiki lighting, add a few crickets. Maybe some Key Lime Pie for dessert. I'm ready for fun.

Slow Cooker Island Beef (serves 6)

  • 1 (20 ounce) can unsweetened pineapple chunks in juice, undrained
  • 2 1/2 pounds cubed beef stew meat
  • 2 large onions, cut into wedges
  • 1/2 cup beef broth
  • 3 tablespoons red wine vinegar
  • 2 garlic cloves, crushed
  • 3/4 teaspoon seasoned salt
  • 3/4 teaspoon ground paprika
  • 1/4 teaspoon ground black pepper
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 2 large tomatoes, cut into wedges

  1. Drain the pineapple juice into a slow cooker, reserving the pineapple chunks. Place the beef, onions, beef broth, 3 tablespoons red wine vinegar, garlic, seasoned salt, paprika, and black pepper into the slow cooker with the juice. Mix well, cover, and cook on Low until the beef is tender, 6 to 6 1/2 hours.
  2. Increase the setting to High and stir in green bell pepper, red bell pepper, and brown sugar. In a small bowl, mix together the cornstarch, soy sauce, and 2 tablespoons red wine vinegar until smooth; stir the mixture into the slow cooker, blending well. Cover and cook for 1 more hour. Just before serving, lightly stir in the tomatoes and reserved pineapple chunks.

  1. Congrats Cheryl
    You're actually there 3 times. #3 & #6 for best-selling romance ebook
but you are also #2 for bestselling romance author. WTG!!

  2. Very nice Cheryl, knew you had it in you!

I like Donna's recipie, but must admit, I love her pool boys! Yum!

  3. I do fine looking at all the hunks until I get to Benji. We all know how I feel about him.

Congrats on the list Cheryl and woo hoo for a great Hero tour!

The recipe sounds amazing too. Donna has great recipes :D

  4. Cheryl, thanks for sharing that link! I loved seeing your name on there so many times. Thanks to Mary G's eagle eye, I knew just where to look!

@Donna, this looks so good. I want to give it a try right away!

    Has anyone checked on Ana?

  5. Ana, Are you ok?
I'm sorry, I didn't invite you over to the pool party. It was a spur of the moment thing.
Enjoy the Beef ladies. Yeah Cheryl. You're on the lists numerous times. WTG!!!
He didn't like this photoshoot. The sidewalk was really hot. He said he ran and jumped in the pool without the tube. When the Camera was off.

  6. Good afternoon, ladies!
I just got home from my riding lesson, and I could sure use a dip in that pool! Having a naked Benji swimming around would just be icing on the cake.
Thanks for the congrats. It's nice to be on someone's bestseller list, even if it isn't the NYT!

  7. Congrats on the list, Cheryl!! You SHOULD be on the NYT list too!

    Put the tube DOWN, Benji---

I'll bet the recipe would be killer with pork, too---I've had "Imu" pork (baked in a pit in the ground) lots of times, and though it had different seasonings, it was VERY good---and I'll just bet this recipe would go well with the flavor and texture of pork, too.

  8. Suzy,
It's great with Pork too. But the big Man wanted Beef this time.
But I like Pork best. LOL!!!

  9. Good thing I don't live with you Donna...I'd be the size of my patio. I have no idea how you manage to ALWAYS serve such delicious sounding meals. I'm sure I get calories on me just by reading the wonderful recipes.

Cheryl, I'll check out the Books on Board list but really I could care less since you're on my personal list. *shrug*

I'm so ready to to a little napping with today's hunks but as far as Benji goes, I have a straight pin in my hand:)

  10. *sigh* I wish I was, too, Suzy, but something tells me it just ain't gonna happen!

I'd probably make this recipe with beef, too, especially since they package that stew beef so conveniently and I don't have to cut it up!

  11. What? I wasn't skinny dipping with Benji! I wasn't.

  12. Uh-huh... Sure, Ana. We believe you.

  13. Ana, I don't. I found your Hand prints all over those Hunky Buns. And Ben claims you took his towel and wouldn't give it back. And you had Leslie and Paulette standing guard at the door of the pool house. HMM!!!
    You go girl. LOL!!!
