Tasty Tuesday Jalapeno Artichoke Spinach Dip!

A few weeks ago, I took the night off from writing and everything else that was happening in my life and sat down and watched Food Network all evening. One recipe caught my attention, and though exact measurements weren't given and I can't remember which show I saw this on, I scribbled down the basic ingredients. Sunday night, I put my culinary skills to the test and devised my own version.

I would have taken a picture of the whole thing, but it disappeared too quickly. With some Ritz crackers, it was dinner for me and Budley. Suffice it to say, we did NOT go away hungry, and the warmed-up leftovers were even better!

Jalapeno Artichoke Spinach Dip


















Ingredients:


Coat 2 good-sized jalapenos with a little olive oil and roast on a cookie sheet at 4oo degrees until the skin is browned and the peppers are soft. Remove caps and chop.

Mix with:

One 14 oz can artichokes, drained and chopped
2-3 oz fresh spinach, chopped
6 oz cream cheese
6 oz ricotta cheese
3 oz Parmesan cheese
1/2 tsp salt, pepper, and garlic powder mixture (Paula Deen's House Seasoning)

Mix well and top with another 2 oz Parmesan cheese and sprinkle with the House Seasoning.
Bake in a greased baking dish (I used a souffle dish) at 375 for about 30 min, or until hot and bubbly and the cheese on top is lightly browned. Serve with the crackers or chips of your choice.

  2. I love watching Food Network! Sometimes they do have some pretty amazing recipes. That dip sounds delicious.

  4. That's a really Hawt Jalapeno dipper. It REALLY looks tasty. Very appetizing. LOL!!! I bet I could fill up on it. And I bet that dip is good too. THANK YOU for starting our morning out just right.

  5. Hey Cheryl-recipe sounds good. I have one similar to it, but no spinach. I'll have to add it and try it out sometime. I also love that you roast the jalapenos in yours first-that smokiness would add a different level of flavor to it. I love the food network too. And I love how you had this for dinner. I love appetizer type foods-who needs a main course??? And this side-o-hunk is perfect for dessert!

  8. The dip recipe totally works for me WITHOUT the Jalapenos but I'm all over the one below;) Yummers!

    I do frequent small meals/appetizers all the time, anytime, as it's exactly how I like to eat.

    Thought of you recently when I ran out of my Hershey chocolate nuggets with almonds and going into withdrawal. In desperation (because I hate going to the store -- even if it couldn't be more convenient) I made some chocolate pudding/pie mix from a box. I was out of milk as well so used a can of table cream. Minutes later I was lapping the warm pudding and thinking I had gone to heaven. I also thought how pathetic it was compared to Cat Master homemade chocolate pie but hey, a woman 'gots' to do.... *grin*

  9. Yeah, well, the Cat Master doesn't make many pies these days, either. Your pudding sounds quite good. My desperation thing is to make peanut butter balls. Just mix some powdered sugar, peanut butter, butter, and a little vanilla, and voila! Even better if you've got some chocolate chips to throw in.

    Finally got the yard mowed this evening. It's only been six weeks since the last time. Not that it needed it or anything. I was mostly kicking up dust and mulching leaves. That little dab of rain we got last evening didn't do a thing!

Another sugar desperation fix: take a can of sweetened condensed milk, (you know the stuff left over from holiday baking?), pull the paper label off, and put it in a pan of boiling water, let it simmer for 3 hours and make sure you keep water in the pan--don't let it go dry! Let it cool for an hour and then open the can. You've got creamy spreadable caramel that tastes great on apples or just by the spoonful...or, come to think of it, spread on the hunk of your choice--perfect for licking off and getting that yummy doodle all sticky and even more delicious!

  11. @Nan---My great grandmother used to make that "boiled-can-o-caramel" thingy for me back in the 1940's, and it's still one of my favorite flavors!!

    @Nan. Very Cool about what can be done with a can of sweetened condensed milk...I didn't know this. I can taste it now on a nice tart apple and other things;) Yum.
