Tasty Tuesday Mexican Spaghetti

Ever start to fix dinner without having a clue what you're going to make? That happens to me more and more these days. I'd had the jars of the peppers and tomatoes in the fridge for a good while, and I finally did something with them out of desperation. The hamburger was in the freezer, the spaghetti in the cabinet, and I'd bought the cheese sauce not knowing why. This was the result. It was very easy and Budley seemed to think it was darn good.












 



Cheesy Mexican Spaghetti

1 lb ground beef
1 tsp Odobo seasoning (mixture of salt, pepper, garlic powder, and oregano)
2 tbsp roasted bell peppers, chopped
2 tbsp sun-dried tomatoes, chopped
1 23 oz jar Tostitos salsa con queso, medium (I used about 3/4 of the jar)

Season the ground beef with the Odobo seasoning and brown in a large skillet over medium high heat. Add peppers and tomatoes. Continue cook until juices have evaporated. Spoon off fat and add the cheese sauce. Cook until heated through. Serve over spaghetti.

  5. OK Ladies !!! Calm down. This looks like a meal my hubs will really enjoy. I threw together a Wild Rice Hotdish Sunday Night he was raving over. And like you I just tossed this and that together. RG says: "Not Bad" most of the times. But Sunday he said. That's better than "Not Bad". That's actually really really good.
    So I have to say today: This guy is tasty and "Not Bad" But I bet Tomorrow will be even better. LOL!!!
    And I need to say: Paulette I'm sending my love and Big Hugs your way. I know saying goodbye to your long time little friend yesterday was is really painful. We've been through it too. Remember the cold nose and warm kisses. And that you'll always carry her in your heart. So a part of Suede will always be there with you. Remember we're your friends and we're always here for each other. That's the great thing about CBEB. We're a Sisterhood of appreciation and support of good friends, good books, great hunks, great yummydoodles. And everything else in between. Too you all!!

  6. I'll eat anything with a Mexican flair to it! My hubby is the "chef" in our house and he is terrific and taking whatever might be in the fridge and making some delicious out of it. It's fun when it all comes together.

    And I'll take a side a that pretty boy for dessert!

  8. I'm also sorry to hear the bad news about Suede, Paulette and I, too, am sending big hugs your way. It's so tough to lose a fur friend and companion. My heart goes out to you.

    It's hard to switch gears so abruptly but it's good that today's hunk is so attractively distracting and there is lovely comfort food to go along with him.

  10. thank you all. please b sure 2 read my yesterdays post. thats how i feel about all of you. took me a good long while 2 write that 2...tears kept getting in the way.

    for anyone who doesnt know...b/c i do feel guilty about sad posts...2 weeks ago suede got into an arguement w/ our newest dog, vienna (they were having a dominance battle). fraggle (our male) tried seperating his women. since he used his mouth 2 pull suede off vienna...suede's skin on her abdomen was injured. vienna also got 4 stitches. suede caught a really bad infection & was in a lot of pain.

    sunday night...suede got 2 have a cheeseburger happy meal w/ a chocolate shake (her favorite & i kept the little toy). but, her injuries & pain were just so great that we did the best thing 4 an animal that u love. i played music, told her that i loved her, & held her tightly as she fell asleep in my arms.

    today is a little better. its so quiet in the house...lol..suede was the barker :-)

    2morrow will b a little better still. well...duh...i know it will b :-) i've seen 2morrows picture! *DROOLS thinking about it*
