Tasty Tuesday Asparagus Pudding!

I know what you're thinking. Asparagus pudding? EEEWWW!!!! But trust me, even my guys who have a strong aversion to anything green will eat this. Not Sam, of course, (he can't be fooled!) but Mikey and Budley will eat it up!

I developed this recipe as a variation on a spinach casserole, so, if you like, you can make it with one package of frozen spinach, thawed and squeezed until relatively dry instead of the asparagus. If you use spinach, you may want to stir it together as opposed to blending it.

Asparagus Pudding

1 egg
1 tall can of asparagus, drained
dash of cayenne
1/4 tsp garlic powder
1/2 tsp salt
1/3 cup flour
3/4 cup grated colby jack cheese
3/4 cup milk
Place all ingredients in the blender and blend until smooth. It will look like really thick pea soup. Pour into greased casserole dish (1 quart size?) and bake at 400 degrees for 45 min until the middle puffs up (it will sink a little after you take it out of the oven) and the top is lightly browned.

The beauty of this dish is that it isn't fussy about cooking times or temperatures. If something else needs to be baked at 350, you can throw this in with it and just bake it until the middle puffs up and enjoy!

I'm guest blogging today on Fresh Fiction. It's a fun character interview with Manx, Drusilla, and Zef. Come on over and join the party!

  1. I don't know if I've ever eaten asparagus or enjoyed it but I do like spinach. This sounds like a good recipe. Yay character interview WOO!!!!!

  2. I don't about this one Cheryl, the Potato Soup was wonderful, but Asparagus Pudding???? Maybe I'll wait for someother brave soul to let me know how it is before jumping on the bank wagon. See ya on Fresh Fiction the first brake I get at work.

  3. I'm sorry, don't want veggies in my pudding.
Aspargus pudding sounds like something you got from Barada 7. I'd rather have Tasty Chocolate Pudding with Whipped Cream. And if we could enjoy it with Manx or one of our Men. It would be so Yummylicious. You go ahead and Enjoy!!!

  4. Like I said, if my guys will eat it, it's GOT to be good! Perhaps you'd like it better if I called it asparagus casserole, which is what I called it originally. It was Mike who dubbed it "Pudding."

  5. Cheryl, I LOVE asparagus, but I have to admit I've never eaten it this way. I'll definitely try it!

  6. At last, a brave one! Good for you, Helen!

  7. Hey, my post disappeared! I wonder where it went! All kinds of computer crap this a.m. I tried to go onto Fresh Fiction and my AVG found a virus on that site so I couldn't open anything past the first screen, so be careful ladies! Then I come back here and my post is GONE! Hmm, maybe I better get off the computer and do something else!

  8. I'll call it Asparagus Quiche. I showed RG. He said it might be good. I'll try it out.
My AVG didn't pick up a virus on Fresh Fiction. But it doesn't hurt to be careful.

  9. I haven't picked up any problems there, Lisa--at least, not that I know of. Of course, it's the ones you don't know about that cause the most trouble!

I like the quiche idea, Donna! I've thought about calling it a souffle, too. Both sound much more gourmet than pudding!

See, it's all in the name...

  10. Good afternoon girls.

Well I got to say that it does sounds interesting. I love trying new things so I'll give it a try tomorrow.

  11. Lisa you are not alone, I was on my lunch hour at work and got on Fresh Fiction, and lo and behold a virus try to hijack me. The virus protection we have is decent, but it make for a hard time to blog my support for Cheryl. I've been on FF many times, this was the first time I had problems. Maybe it was just the timing, I have no clue. I'm not the most computer savy person I know. lol Just enough to be dangerous...

  12. Same here. Beware of opening Fresh Fiction. It tried to open an attack on my computor. Thankfully, I am getting a message from Norton virus swcan that they are processing threats from that site.

  13. Yup, I wish I had taken notes when the message came up, because it specified a site that seemed odd and quite possibly not related to FF at all....unfortunately, all I can remember is that it had "dance" as part of the URL....

Sorry we could support you on FF today Cheryl...but you know we would've if we could've!

  14. Ouch! Sorry you ladies had so much trouble on that site. I've never been on that one before, but I'm sure it's not their fault anyway. Hopefully they will get it sorted out.

    Thanks for your support!

  15. That's it, Leslie! Be brave, be daring, and try it!

  16. At first the site just did not agree with me but it worked out. The character interview was great. Maybe you can post it on here so we can all see it Cheryl :D

  17. Good idea, Ana! I'll do that! I think I have a slot open next Thursday. Look for it then!
