Tasty Tuesday Turkey Salad!

This is Donna's take on turkey salad, and it looks mighty tasty!

DONNA's Turkey Salad

"This recipe can be made with leftover turkey, or a turkey breast. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and candied pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or breads."

Ingredients:

  • 6 cups cooked turkey meat
  • 6 eggs cooked
  • 1 (16 ounce) jar sweet pickles, chopped
  • 1 1/2 (10 ounce) jars mustard-mayonnaise blend (Dijon)
  • 3/4 cup mayonnaise

Directions

  1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  2. In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared mustard/mayonnaise sandwich and salad sauce (Or Dijon) and plain mayonnaise. Chill in the refrigerator approximately 3 hours before serving.

  4. I'm glad you put this up today. I have left over Turkey Tenderloin and too many eggs. And now I know what I'm going to do with it today. I know how tasty this is.

    But, of course it's not as tasty as Cheryl says a Zetithian and his Joy Juice is. And that we can only imagine. So we need to go visit a faery. OK!!!

  5. Looks yummy to me! I like chicken salad, but have never tried to make turkey salad. Apparently I'll have to give it a shot!

    Great recipe! I just checked the Book Faery and the post isn't up yet. She may be one of those manual posters on the west coast. Not sure when it will be there. I'll keep checking it and let you know when it goes up.

    LOL! I just finished the last blog yesterday, Kendra. Now I'm working on Wednesday's Casablanca post. It never ends!

  7. Morning all! Donna that does look good. I love all the things you can do with turkey leftovers and making sandwiches is always high on the list. I love that it has so much pickles in it. Yummy! Haven't had breakfast, now I'm starving!

  8. Yumm thar Turkey salad looks delicious Donna. With it I might be able to convince my family to eat Turkey. I love Turkey but they would have nothing to do with it. I'll try it out today.

  11. Wow, D Donna--your recipe is very close to my own---except I use chopped celery and green onions instead of the sweet pickles. It's a favorite of mine, as I've always loved to make up a batch of 'salad' stuff and just let the other members of the household get their own dinners! I would be TIRED when I got home from work (back in the day), and it was nice when I'd have the bulk of the evening meal already made. The Book Faery, Huh??? You're taking us to some interesting sites, Cheryl!!

  13. Donna...the turkey salad does sound good. Perhaps I'll try it when I have company coming some time...otherwise I'd be eating it FOREVER if you know what I mean:) I can buy an already roasted turkey breast from the Safeway when I'm ready to do it.

    What really caught my eye was the candied pecan halves. I LOVE pecans and happen to have a supply of some very good ones. Can you give us your recipe?

    I think it's fun to know what books are being read so...

    Book I just finished: Born of Fire (Sherrilyn Kenyon). I'm a long time big fan of Kenyon.

    I'm off to check out The Book Faery, shower (just came in from a walk) and then flop on the couch and watch The Biggest Loser. Even though I know it's TV land, it fascinates me to see people accomplish what they thought was impossible.

    P.S. Cheryl...LOL you thought I was the earliest bird on the blog the other day but the truth is I hadn't gone to bed yet:)

  14. You remind me of my son, Nancy. He stays up most of the night and then goes to bed at about five.

    I'll do my walking in a bit. Right now my DH has my treadmill torn apart replacing the heart rate sensor. I sure hope it works. The damn thing is brand new and the repairman has already been here once.

  15. I'm glad everyone likes the Turkey Salad. We had it tonight. And RG had two sandwiches. I had one. There's Alot left. It does make alot. But it's good on a crackers for a quick bite too. Nancy, the Candied Pecans are from Paula Dean. I'm reading the Alien Dragondoodle story you suggested Jessica. OMG!!! I think you made more fans at the Book Faery. Yeah!!
