Tasty Tuesday Tuna Noodle Casserole!

Donna sent me this recipe a while back, and though I've always liked this dish, I have an idea it would be quite tasty if made with leftover turkey too!
The good old stand by made from scratch. In this time of unemployment and tight purse strings, we might need to have a few more meals with tuna. Just don't forget the NOODLES!
TUNA NOODLE CASSEROLE (serves 6)

Ingredients

  • 1/2 cup butter, divided
  • 1 (8 ounce) package uncooked medium egg noodles
  • 1/2 medium onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 clove garlic, minced
  • 8 ounces button mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • salt and pepper to taste
  • 2 (6 ounce) cans tuna, drained and flaked
  • 1 cup frozen peas, thawed
  • 3 tablespoons bread crumbs
  • 2 tablespoons butter, melted
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter.
  2. Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain.
  3. Melt 1 tablespoon butter in a skillet over medium-low heat. Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.
  4. Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole. Top with cheese.
  5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

    I LOVE tuna noodle casserole. As usual Diva Donna's recipe sounds delish. This I could make and then freeze part of it:)

  5. Good morning, ladies!
    Too brain dead to post a coherent comment this morning. Was out late with my buddies celebrating Suzie's BD, and it was pouring down rain the whole time. Doncha just hate that? Anyway, after we went to a karaoke bar and were the only ones there, did a bit of flirting with the bouncer and the bartender and left, we went to the Cirilla's (used to be Pricilla's) shop while we were killing time before the standup comedy show we planned to see and bought some stocking stuffers for Budley--some that he'll have to open when the kids aren't around. (Whoa! That's a LONG sentence!) Might be fun, except I have to work on Christmas night. Hmm.... Maybe I'll give them to him on Christmas Eve....

  7. This is a versatile dish. Any meat can be added. And you can canoodle with this yummydoodle all you want. And you can even use him as your plate. I think it would be fun to chase the peas over his pecs and role them down the treasure trail. And then gobble them all in one mouth full. Just saying: This dish is yours to enjoy as you wish.
    Boy, Cheryl it sounds like you gals had alot of fun at Suzie's BD outing. And sometime you have to tell us what you stuffed in Budley's Christmas stocking. Any VCR's? I was checking them again at Target yesterday. My W/V word today is: SURIJN(the i is silent)
    I think we'd like to see this furry yummydoodle do some surijn. LOL!!!

  8. Another winner from our Diva Donna! I loved this dish as a kid. It was an inexpensive, easy to make dish! But I must admit, I have not had it since I moved away from home. My mom always crunched up potato chips on top-yummy!

    Nice hunk too Cheryl! And good for you heading out for an evening out with the girls. I'm so over due on one of those! So, did you do some karaoke singing?

  9. Nope. We got to the bar at 9, but it had just opened and the karaoke thing didn't start until 10:30, so we drove around until I suggested Cirilla's. We killed some time there until the comedy show started at 10:30. It was a fun time, but I was a little worn down and wasn't exactly the life of the party.

    Can't tell you what I bought for Budley, Donna. He might not like the idea of me sharing that with anyone, let alone post it on the internet!

    I kind of feel the need to say this once, then I won't ever bring it up again. But you're all so sweet, and I wanted you all on the "inside." Since I teach in a public school, I had to assume a pen name for my erotic romances because all I need is one parent to get upset that I write "smut," and I'd be in trouble.

    So here goes -- just this one time -- Paige Matthews is actually Sandy James. I critique for both Cheryl and Nan, so they sometimes use some "inside jokes" -- like Nan did today with her story about a conductor.

    So all the yahyahs are in my circle of trust now.

  19. Hi, Noelle! Nan and I are friends, and I hated that she and Cheryl had to act like I wasn't me. Now I'm like Sybil -- except I have two personalities instead of seventeen. Plus, as Paige, I can be a bad as I wanna be. :) But we'll all pretend after today that Paige is just Paige.

  23. YahYah's, so sorry for the inside joke. This guy is totally the hero in my story that (Paige) Sandy is critiquing for me--he's a symphony conductor and I'm having a ball with him (hopefully so is Paige). Cheryl will testify, Paige is the best crit partner ever, as well as a fantastic romance author! Hopefully, one day I can tell you all about my romance novel--and send you to Amazon to order it!

    I love it when you're bad, Paige!! And yes, he is so Liam!

What do you want to bet that what Cat Master got for Budley's stocking is round and came from Walmart? *snort* She probably just needs to fess up now because our imaginations could do so much worse.... Black leather? Straps? Buckles? Harness? Blindfold? Handcuffs? (the list is endless;) AND, can we just say that she has an ENTIRE pole barn as a playpen.
