Tasty Tuesday Chicken Cordon Bleu!

Today our own Diva Donna gives us "Blue Ribbon " or Cordon Bleu Chicken in a creamy wine sauce...

Chicken Cordon Bleu

   Ingredients

  • 6 skinless, boneless chicken breast halves
  • 6 slices Swiss cheese
  • 6 slices ham
  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 6 tablespoons butter
  • 1/2 cup dry white wine
  • 1 teaspoon chicken bouillon granules
  • 1 tablespoon cornstarch
  • 1 cup heavy whipping cream


Directions

  1. Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
  2. Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
  3. Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.
And here's Bugsy!  I still think he's pretty ugly. Maybe he'll look better with a little more meat on his bones.

  3. Cheryl...Bugsy looks like a Boxer to me and someone has gone to the trouble of cropping his ears...usually done on pups at 10 to 12 weeks. You may want to contact a Boxer rescue group near you and include his photo. There are rescue groups for nearly every breed of dog and Bugsy doesn't look like a mix to me --- worth a try. The info is readily available on the internet with a possible group close to you. I also think Bugsy hasn't grown into his head yet or paws yet. *grin*

    Good on you for being concerned at all because that "dump" thing goes on in every state. I wish all "dumpers" straight to hell. It's just so bloody wrong to do that to helpless animals.

    How sexy is today's hunk all tangled up in a net. Uh huh. Thanks Diva Donna. When I can tear my eyes away from net hunk, I'll check out the delicious sounding Cordon Bleu Chicken recipe more thoroughly;)

  5. I don't know, Suzy. Somewhere along the line, the Cat Master thing came up and stuck.

    Bugsy could be a Boxer, but if so, he's awfully small. He doesn't fit his head and feet mainly because he's so thin. We'll see what he looks like when he's got more weight on him!

  7. *laughing* I'm glad you enjoyed the Recipe and the Beach Hunk. I found those pictures when I was reading "Virgin" I guess. LOL I agree with Queen Yah-Yah and think Bugsy is a young boxer. I hope somebody is looking for him. And he finds his way home. Or you keep him and teach he learns better behavior.

  8. I checked the Boxer and Boston Terrier rescue sites. Don't see any dogs that look remotely like him. I'm going to the grocery in a bit. Will check the bulletin board.

    In the meantime, enjoy the beach!

  9. No posts for Bugsy at the grocery. Just a Jack Russell and a Scottie. I bought him some worm medicine, a bowl, and a flea collar. He seemed pleased with all three.

    If you really want to keep Bugsy, I'll shut my pie hole right this minute but I'm thinking about do you want to take on additional vet bills and responsibility for another pet? It becomes particularly dicey when health care history is unknown and even normal, routine vet care is costly.

    The local animal shelter could tell you whether or not Bugsy's been micro-chipped. If I lost a pet, the first place I would call would be my local shelter(s).

    Usually shelters are more than happy for people who find lost pets to retain temporary custody until/if the owner shows, if that's what you wish.

    I usually check to see whether or not a shelter has a "no kill" policy and always prefer (when I can) to care for the dog myself until the owner gets in touch.

    Today it's a great deal easier than it used to be for lost and found pets to reunite since there are national as well as state pet web sites set-up for this purpose. Naturally it must be done with caution since there are still plenty of unscrupulous a-holes around that don't really love animals.
