Tasty Tuesday Potato Soup!

When I was growing up, it was a tradition in our house to have potato soup for dinner on Christmas Eve. My mother never explained why, but since she rarely made it any other time, I'm thinking it had some special significance. Unfortunately, I never thought to ask her before she died in 1977.

This isn't her recipe, but one I've developed on my own over the years, and it's pretty close to the original.

Potato Soup


1 large chopped onion
3 tbsp flour
3 cups water
3 cups potatoes, peeled and diced
3 tablespoons butter
1 1/4 tsp salt
1/4 tsp pepper
2 cups hot (not boiling) milk

In a large soup pot, saute the onion in the butter over medium high heat until transparent. Whisk the flour into the water and add it and all ingredients except the milk to the pot. Bring to a boil, then cover and reduce heat to low, stirring occasionally and cooking until potatoes are soft. Add the milk and adjust seasoning as desired, adding more butter if necessary. Top with grated cheese and enjoy!

  4. OUCH!! I know Peaches is worth it, but still OUCH!

    I'm not much of a cook, but the soup recipe sounds simple enough even I can't screw it up. I'm going to be on a battery recharge vacation starting Wednesday. I may try to make the soup. I'll let you know if it's eatable.

  5. Oh, damn. You've got my sympathies on the vet bill.

    Soup looks goooooood. My gramma always used to make broccoli cheddar soup for Christmas Eve when we lived next door. I think she's happy to not have to do it every year now (she and grampa are coming here for the holiday with my parents tomorrow), but I miss it sometimes! And I do love potato soup.

  6. Potato Soup was a real comfort food. And inexpensive in your Mother's time. And still today.
    And I guess you need alot of comfort Cheryl today. Ouch!!!That's a alot of money. And a very serious problem. After all this, I hope they fixed it. We all would really hate to loose that cute little doggie.
    I just made Chunky Potato Ham Soup Sunday night. It's pretty much this soup but I added Ham. Carrots and Red Pepper Flakes. I'll leave out the Red Pepper flakes next time. I can't take the heat.

  7. Okay, ladies!
    Here's the update on Peaches.

    She had the exploratory surgery on Friday for intussusception. I brought her home yesterday morning and she seemed fine. Ate a whole can of dog food at 4:30, but by the time Bud got home at 6:30, she didn't even want to come out of her dog house. Our local vet said the intussusception could recur, and if it did, to take her to the emergency vet clinic in Indianapolis. So we did. We got there at 9pm and didn't leave until 1:30 and we got home at 3. They did x-rays that didn't show anything, but the vet felt a soft mass in her abdomen, so they did an ultrasound that showed a beautiful intussusception, but it turns out that wasn't what it was, it was adhesions from the previous surgery that were causing a bowel obstruction.The part of the bowel that was causing the intussusception didn't look good, so she took it out and released the adhesions. They were supposed to go ahead and spay her, but I'm not sure whether they did or not. Bud was the one who called them, and he forgot to ask. At least she didn't have pancreatitis on top of all that, which was something the vet suspected.

    When I paid the $2000 deposit (total will be somewhere around 4K) I gave them a handful of bookmarks and told them I'd have to sell a LOT of books to pay for this. I was a bit punchy by that time, or I probably wouldn't have done that. Anyway, I got to bed at 3:30 and just got up at 9 to feed the horses. Bud actually went to work. I had a riding lesson this morning, which I called and canceled on the way to Indy. Sure don't feel like riding this morning!

    Aside from all of this, they report that Peaches is doing fine. They are, however, going to do some tests on her to see if they can find out why this is happening to her, though I'm not sure they'll find any solutions.

  8. Man, Cheryl, what a night. I'm glad she's doing okay now, at least...they don't think this is going to recur, do they? Poor baby. And poor you! I'm sure you're just wiped out, physically AND emotionally. Sucks about the bill, too...I really do sympathize, one of my dogs almost died a couple of years ago from some tainted pig ear chewies, and that was NOT a cheap thing to bring her back from. I'm seriously getting pet insurance next time we get a creature! Thanks for the update, we're all thinking of you today!! Hugs to you and Peaches both.

    Pet insurance? I wouldn't need it if I could just stick with my local vet. He's never been very expensive, but you get into a big city, and the price goes up. And yes, she could get adhesions again, which is odd because, at least with humans, that's something that usually happens several years after an abdominal surgery, rather than days.

  12. Aw, Cheryl, I'm so sorry to hear about Peaches' relapse. I'm surprised to hear that she had adhesions form so soon after her first surgery too. What a night! I'm sure you are exhausted! I know it's difficult, but try to get some rest. I'm gonna keep you and Peaches in my thoughts today!
