Tasty Tuesday Scottish Shortbread!























A friend of mine brought back this shortbread mold for me when she visited Scotland many, many years ago. The recipe that was attached to it is long gone, but here's the recipe I have used since then. It's a variation of the recipe in the King Arthur Flour Cookbook. It's very simple and very good!

Scottish Shortbread

2 sticks of butter at room temperature
1/2 tsp salt
1/2 cup sugar
3 cups flour

Preheat the oven to 325 degrees. Cream together the butter and sugar in a food processor and then add the flour and salt and process it until well mixed. The dough will be dry and crumbly. Spray the mold with a little cooking oil and then dust it with sugar to keep the dough from sticking. Press portions of the dough into the mold and then turn onto a greased cookie sheet. If you don't have a mold, you can use a small pan to press the dough into. Make it about 1/2 inch thick. Bake the shortbreads until they're firm and just beginning to turn golden brown--about 30 minutes or so. This recipe will fill up my mold four times, but it's pretty easy to cut the recipe in half if you want. You can cut it into squares, but I prefer to break it into pieces since it tends to crack anyway.

  1. And I am back. I didn't have internet at the hotel we had the convention at without having to pay for it. And I didn't want to pay for the internet so I missed the blog entries. I've caught up on all entries and comments thus far. I'm happy we started Kilt week and the many pictures are delicious thus far.

    Cheryl I got the ARC of Hero while I was gone and I must say I'm very excited to start it.

    I missed everyone on here and I'm glad I'm back.

  3. I do believe that I can do the shortbread, it sounds easy. I wonder if the guy in the first pic is as 'easy', *sigh* I wouldn't mind finding him in my kitchen or anywhere else in my apt either!

    ok, now, the real action

    pic 1: his tanned skin calls 2 my tongue. but...look at those chains. that hot. and his collar. oooohhhh...thats hot. look at that, his kilts torn, all the way up. that is totally hot. its snowing, he could be cold, awwww, hell, he's so hot it will melt anyhow & he does need some punishment for that ruined kilt. someone, he needs 2 b spanked. who can take care of that??? & it looks 2 me like he's wearing a jock strap...i thought he was told 2 go bare???

    pic 2: the guy on the left is getting married. but the guy on the right...he's wearing his kilt very low. any volunteers 2 go & give him a little pull...on the kilt? i bet it will fall in a puddle around his feet. then u can give a little yank on some other fun parts.

    pic 3: cool, they look like they r really in scotland. cute knees. such big teases they r. now all we really need is that big...wind.

    pic 4: ok, it will take a minute. i fell off my chair.

    wow.

    there's someone there 4 everyone. i pick the 3rd specimin from the left. y'all can rumble over the others.

    but really i cant wait 4 tomorrow. hopefully there will b a big wind!

    I know what you mean about the internet thing. I had to pay for it at RWA last year in DC, and it was NOT cheap! I mean, come on! Most places have it for free!

    Did you touch the Hunky Buns yesterday? I bet you did. And Cheryl this Shortbread plate is beautiful. Recipe looks yummy. But I think the Men will be less fattening. And they all look like fun. And just think about it. A real Scottish STAFF meeting. Paulette you might get some trouble over #1. I think Lip lock Lisa will want a taste of that one.
    I'll take those 3 Real Scottish guys with me. They look really ready for fun. LOL!!! I love this Week.

  8. I had no idea there was such a thing as a shortbread mold. It's very pretty and it looks to have a pineapple in it, or is it supposed to be something else?

    Welcome back Ana! Hope you had fun at the CON. I can't wait to hear all about it. I dream of going to the comic-con someday and seeing all the Acheron and Dark Hunter wannabes. I've seen pics on Kenyon's website and it always looks like a good time!

    I'm keeping Kilt dude number one for myself today. I woke up with a kink in my neck and need a massage. He looks very strong!

    I'm really loving every kilt posted.

    Oh, and the shortbread sounds delicious. I love shortbread and so does the rest of my body...unfortunately.
